It's my turn, and I cast Lightning Bolt, targetting the Merfolk. The
Merfolk are destroyed, but what happens to the Rancor? What about during
my opponent's turn?
Since it's your turn, your triggered abilities are put on the stack first,
and opponent's go on on top, if there's a time when triggered abilities
both of you control are trying to go on at the same time.
You've left out an important point here, alas - who controls the Rancor?
(Who owns it is also relevant but less important, as that only decides whose
hand it will end up in.)

Whenever a card is put into a graveyard, remove that card from the game.
Rancor >G (1), Enchantment - Aura
Enchant creature Enchanted creature gets +2/+0 and has trample.
When Rancor is put into a graveyard from play, return Rancor to its
owner's hand.
Not sure where these "1"s are coming from; Planar Void costs B, not 1B, and
Rancor costs G, not 1G.
But both of these are ordinary triggered abilities, and both will trigger
when the Rancor goes to the graveyard (right after the Merfolk do, which
is in turn right after the Lightning Bolt card does). So once state-based
effects are done being checked, there will be FOUR triggered abilities
waiting to go on the stack: three from Planar Void (one each for the Bolt,
the Merfolk, and the Rancor) and one from the Rancor.
If it's a Rancor you controlled, then you get to arrange these as you wish
regardless of whose turn it is - if one player has multiple triggered abilities
going onto the stack simultaneously, that player arranges their order. In
that case you'd _probably_ want to put the Rancor ability on the stack above
the Planar Void ability that triggered off the Rancor... so that the Rancor
ability would resolve first and the Rancor would go back into owner's hand.
(Your Bolt and opponent's Merfolk are going to end up in the RFG zone.) But
you could also arrange them so that it got removed before its own ability
could bounce it to owner's hand.
If it's a Rancor opponent controls, which is somewhat more likely, then:
1) on YOUR turn, his Rancor's ability will go on the stack on top of all
three of your Planar Void abilities; the Rancor will go back to owner's hand
before your Void can remove it from the game.
2) on HIS turn, his Rancor's ability goes on the stack first, then all three
of your Void abilities go on the stack on top of it (in an order you choose);
the Rancor will get removed from the game before its own ability can bounce
it back to owner's hand.
